Simple Mexican Casserole

Create this Mexican casserole recipe with chicken tenders, corn bread mix, taco seasoning, corn, mild salsa, and cheddar cheese.

Chicken tenders, from the deli, diced

1, .85 oz. box

Corn bread mix

1 packet

Taco seasoning mix

1, 15 oz. can

Corn, drained

1 cup

Mild salsa sauce

4-6 oz.

Cheddar Cheese

Directions

  1. Grease a 9-inch square baking dish. Prepare the box mix of cornbread as directed on the box and pour the whole prepared mix in the baking dish.

  2. In a hot skillet warm the chicken tenders and mix in the taco seasoning according to the package directions. Let the mixture simmer until the taco seasoning and chicken mix become almost dry.

  3. Mix in the drained can of corn until the entire mixture is warmed up. Place chicken and taco seasoning mixture evenly over the prepared cornbread mix in the baking dish.

  4. Spread the salsa to taste on top of the casserole and top with the cheddar cheese.

  5. Bake at 325° Fahrenheit for 25 minutes. In the meantime, prepare broccoli or salad for a side dish.
