Curried Chicken Salad

Spice up dinner time with this curried chicken salad recipe. Serve as a hearty dip for gatherings, on crackers for a tasty treat or as a sandwich for a tasty meal.


3 cups

Rotisserie chicken, from the deli, chopped


Lemon, juiced and zested

1 1/2 tsp

Indian curry powder


Red onion, diced

1 Ccp

Greek yogurt

1/2 cup

Cashews, chopped

1/2 cup

Cilantro, chopped

1/2 tsp



  1. In a small bowl mix the lemon juice, lemon zest, curry powder and red onions together. Let rest for at least 10 minutes.

  2. In a large bowl, mix together the chicken, yogurt, cashews, cilantro, and salt. Stir in the lemon juice mixture until it’s fully combined. Chill in the fridge for at least 30 minutes before serving.

  3. Chef Tip – you can serve this on crackers, as a sandwich, as a hearty dip, etc.
