Crimson Chicken Slaw

A fresh colorful main dish slaw recipe featuring red cabbage and radicchio paired with chicken tenders and tossed with a spicy mint vinaigrette.



Chicken tenders, from the deli, cut into strips

1/4 cup

Dried cherries

1/4 cup

Pomegranate juice

2 Tbsp.

Red wine vinegar

2 Tbsp.

Olive oil

2 Tbsp.

Sweet chili sauce

2 Tbsp.

Mint, snipped

1 clove

Garlic, minced

1 tsp.

Ginger root, minced

6 cups

Red cabbage, shredded

2 cups

Radicchio, torn

1/4 cup

Red onion, chopped

1/4 cup

Crystallized ginger, minced

1/4 cup

Almonds, sliced

1/4 cup

Parsley, chopped


  1. Place the cherries, pomegranate juice, red wine vinegar, olive oil, sweet chili sauce, mint, garlic and ginger root in a blender; blend until smooth to make the vinaigrette.

  2. Place the chicken and remaining ingredients in a large bowl to create the slaw. Toss the vinaigrette with the slaw mixture to evenly coat.

  3. Serve or cover and chill up to 6 hours.
