Crimson Chicken Slaw
A fresh colorful main dish slaw recipe featuring red cabbage and radicchio paired with chicken tenders and tossed with a spicy mint vinaigrette.

1/4 cup | Dried cherries |
1/4 cup | Pomegranate juice |
2 Tbsp. | Red wine vinegar |
2 Tbsp. | Olive oil |
2 Tbsp. | Sweet chili sauce |
2 Tbsp. | Mint, snipped |
1 clove | Garlic, minced |
1 tsp. | Ginger root, minced |
6 cups | Red cabbage, shredded |
2 cups | Radicchio, torn |
1/4 cup | Red onion, chopped |
1/4 cup | Crystallized ginger, minced |
1/4 cup | Almonds, sliced |
1/4 cup | Parsley, chopped |
Directions
Place the cherries, pomegranate juice, red wine vinegar, olive oil, sweet chili sauce, mint, garlic and ginger root in a blender; blend until smooth to make the vinaigrette.
Place the chicken and remaining ingredients in a large bowl to create the slaw. Toss the vinaigrette with the slaw mixture to evenly coat.
Serve or cover and chill up to 6 hours.
