Chinese Chicken Salad with Red Chili Peanut Dressing

Creamy peanut flavor brings a soy-based, chili dressing to a new level in this salad recipe featuring rotisserie chicken.

Rotisserie chicken, from the deli, shredded

1/4 cup

Rice wine vinegar

2 Tbsp.

Smooth peanut butter

1 Tbsp.

Fresh ginger, chopped

2 tsp.

Chipotle pepper puree

1 Tbsp.

Soy sauce

1 Tbsp.

Honey

2 tsp.

Sesame oil

1/2 cup

Canola oil

Add

Salt and fresh ground pepper

1/2 head

Napa cabbage, shredded

1/2 head

Romaine lettuce, shredded

Carrots, shredded

1/4 lb.

Snow peas, julienned

1/4 cup

Cilantro, coarsely chopped

1/4 cup

Green onions, thinly sliced

1/2 cup

Toasted peanuts, chopped

1/4 cup

Fresh mint leaves, chopped

Add

Grilled lime halves for garnish

Directions

  1. Whisk together the vinegar, peanut butter, ginger, chipotle pepper puree, soy sauce, honey, sesame oil and canola oil in a medium bowl. Season with salt and pepper to taste.

  2. Combine cabbage, lettuce, carrots, snow peas, cilantro and green onions in a large bowl. Add the dressing and toss to combine.

  3. Transfer to a serving plate and top with chicken strips, peanuts and mint.

  4. Garnish with lime wedges and serve.
