Chilled Caesar Salad with Rotisserie Chicken
The popular Caesar salad recipe reaches new heights of flavor with the addition of fully cooked rotisserie chicken from the deli.

2 cups | Rotisserie chicken, from the deli, shredded |

1, 12 oz. bag | Chopped romaine lettuce |
3 oz. | Caesar salad dressing |
1 oz. | Croutons |
6 | Grape tomatoes |
6 | Black olives, pitted |
4 Tbsp. | Parmesan cheese, shredded |
Add | Black pepper, coarse cracked |
Directions
Arrange chicken on a microwave-safe platter. Cover with wax paper and microwave for 45-60 seconds or until chicken is heated through. Keep warm.
Combine chicken, romaine lettuce, Caesar dressing, and croutons in a bowl. Toss well to coat with dressing.
To assemble single serving: place half of salad mixture in a bowl. Top with 3 grape tomatoes, 3 black olives, 2 Tbsp. Parmesan cheese, and fresh ground black pepper.
Serve with warm focaccia bread.
