Chilaquiles
This traditional Mexican breakfast dish requires only a few minutes of prep time.
Ingredients

5 cups | Tortilla chips, from the deli |

1 1/2 cup | Tomatillo salsa (chili verde) |
6 | Eggs, blended |
2 cups | Chihuahua cheese, grated |
1/4 cup | Cilantro, chopped |
Directions
Preheat the oven to 350 degrees Fahrenheit.
Spread the tortilla chips into a 8" x 8" glass baking dish.
In a medium sized bowl, stir together the salsa and eggs. Pour over the tortilla chips.
Sprinkle the cheese over the top and bake for 40 minutes.
