Chilaquiles

This traditional Mexican breakfast dish requires only a few minutes of prep time.

Tortilla chips, from the deli

1 1/2 cup

Tomatillo salsa (chili verde)

Eggs, blended

2 cups

Chihuahua cheese, grated

1/4 cup

Cilantro, chopped

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Spread the tortilla chips into a 8 x 8 glass baking dish.

  3. In a medium sized bowl, stir together the salsa and eggs. Pour over the tortilla chips.

  4. Sprinkle the cheese over the top and bake for 40 minutes.
