Chihuahua Chicken Bowl

Enjoy this quick, easy, and flavorful Mexican bowl.


2 cups

Rotisserie chicken, from the deli

8 cups

Mixed Greens

1/2 cup

Cilantro lime dressing

1/4 cup

Pumpkin seeds, toasted


Avocado, diced

1 can

Pinto beans, drained

1/2 cup

Chihuahua cheese, grated


  1. In a large mixing bowl, toss the mixed greens and dressing together. Portion out the greens into 4 bowls.

  2. Garnish with seeds, avocado, pinto beans, rotisserie chicken and Chihuahua cheese. Serve while the chicken is still warm.
