Chicken and Black Bean Bites

A savory filling made with baked chicken, black beans, chunky salsa and Southwest spices encased in a puff pastry to complete this small bites recipe.


16 oz.

Baked chicken, from the deli, finely diced or shredded


Frozen puff pastry sheet, thawed

1 can

Black beans, rinsed and drained

3 Tbsp.

Chunky salsa

1/4 tsp.

Cayenne pepper


Salt and pepper


  1. Preheat oven to 375° Fahrenheit. On a floured surface, roll out pastry sheet with a rolling pin to about 12 x 16 inches. Cut dough into strips, then into 12 squares (approx. 4 x 4).

  2. In a bowl, mix the chicken, beans, salsa and spices together. Lay out pastry squares and place 1 Tbsp. or so of the chicken mix in the center of the pastry. With a small amount of water in a shallow cup, wet finger and dampen all the edges of the pastry. Fold the dough into a triangle and press the edges together to form a seal.

  3. Place each triangle on a non-stick baking sheet. Lightly spray the tops with cooking oil spray and bake for 12-14 minutes, or until lightly golden brown. Makes 12 triangles.

  4. Serve with extra salsa on the side.
