Chicken and Black Bean Bites
Baked chicken, from the deli, finely diced or shredded
Frozen puff pastry sheet, thawed
Black beans, rinsed and drained
Salt and pepper
Preheat oven to 375° Fahrenheit. On a floured surface, roll out pastry sheet with a rolling pin to about 12 x 16 inches. Cut dough into strips, then into 12 squares (approx. 4 x 4).
In a bowl, mix the chicken, beans, salsa and spices together. Lay out pastry squares and place 1 Tbsp. or so of the chicken mix in the center of the pastry. With a small amount of water in a shallow cup, wet finger and dampen all the edges of the pastry. Fold the dough into a triangle and press the edges together to form a seal.
Place each triangle on a non-stick baking sheet. Lightly spray the tops with cooking oil spray and bake for 12-14 minutes, or until lightly golden brown. Makes 12 triangles.
Serve with extra salsa on the side.
