Chicken Wing and Quinoa Salad
Fresh apples, quinoa, pomegranate seeds, kale, feta and boneless wings with curried honey mustard dressing complete this recipe.

1 lb. | Boneless wings, from the deli, Original or Honey Comb |

1/4 cup | Honey mustard dressing |
1 Tbsp. | Apple cider vinegar |
1/2 tsp. | Curry powder |
3 | Leaves of kale, stem removed, sliced thinly |
1/4 tsp. | Salt |
1/8 tsp. | Black pepper |
3 cups | Quinoa, cooked and cooled |
2 | Apples, diced |
1 head | Romaine lettuce, chopped |
1 cup | Pomegranate seeds |
3 Tbsp. | Feta cheese, crumbled |
Directions
Prepare quinoa according to package directions. Combine the honey mustard dressing, vinegar and curry powder. Set aside.
Combine the kale, olive oil, salt and pepper into a medium bowl. Massage the ingredients with your hands for 1 minute to wilt the kale. Combine with the quinoa, diced apples and ½ Tbsp. of the dressing. Set aside.
Place the lettuce on a plate, top with the quinoa mixture and boneless chicken wings.
Sprinkle with feta cheese and pomegranate seeds and drizzle with dressing.
