Chicken Wing and Quinoa Salad

Fresh apples, quinoa, pomegranate seeds, kale, feta and boneless wings with curried honey mustard dressing complete this recipe.

Ingredients

Boneless wings, from the deli, Original or Honey Comb

1/4 cup

Honey mustard dressing

1 Tbsp.

Apple cider vinegar

1/2 tsp.

Curry powder

Leaves of kale, stem removed, sliced thinly

1/4 tsp.

Salt

1/8 tsp.

Black pepper

3 cups

Quinoa, cooked and cooled

Apples, diced

1 head

Romaine lettuce, chopped

1 cup

Pomegranate seeds

3 Tbsp.

Feta cheese, crumbled

Directions

  1. Prepare quinoa according to package directions. Combine the honey mustard dressing, vinegar and curry powder. Set aside.

  2. Combine the kale, olive oil, salt and pepper into a medium bowl. Massage the ingredients with your hands for 1 minute to wilt the kale. Combine with the quinoa, diced apples and ½ Tbsp. of the dressing. Set aside.

  3. Place the lettuce on a plate, top with the quinoa mixture and boneless chicken wings.

  4. Sprinkle with feta cheese and pomegranate seeds and drizzle with dressing.
