Chicken Wing and Quinoa Salad
Boneless wings, from the deli, Original or Honey Comb
Honey mustard dressing
Apple cider vinegar
Leaves of kale, stem removed, sliced thinly
Quinoa, cooked and cooled
Romaine lettuce, chopped
Feta cheese, crumbled
Prepare quinoa according to package directions. Combine the honey mustard dressing, vinegar and curry powder. Set aside.
Combine the kale, olive oil, salt and pepper into a medium bowl. Massage the ingredients with your hands for 1 minute to wilt the kale. Combine with the quinoa, diced apples and ½ Tbsp. of the dressing. Set aside.
Place the lettuce on a plate, top with the quinoa mixture and boneless chicken wings.
Sprinkle with feta cheese and pomegranate seeds and drizzle with dressing.
