Chicken Florentine Pizza

Rotisserie chicken, from the deli, shredded

1 Tbsp.

Garlic oil

1 tsp.

Dried Italian seasoning

Prebaked pizza crust, 16 oz.

1 cup

Ricotta cheese

1/2 cup

Mozzarella cheese, shredded

1, 10 oz. package

Package frozen spinach, thawed and squeezed dry

2 Tbsp.

Sun-dried tomatoes, marinated in olive oil; drained

1/4 cup

Parmesan cheese, grated

Directions

  1. Preheat oven to 425° Fahrenheit. Pull 1 lb. of the rotisserie chicken into 1 inch pieces.

  2. Heat garlic oil in large skillet to medium. Add chicken and cook 10 minutes or until done (internal temp 170°F). Stir in seasoning and remove from heat.

  3. Combine ricotta and mozzarella; spread on prebaked pizza crust. Spread spinach over cheese mixture; add chicken and tomatoes. Sprinkle with Parmesan cheese.

  4. Bake pizza 10 to 15 minutes or until crust is golden brown and cheese is melted.

  5. Serving Suggestion: Cut into 8 portions for 4 servings or cut in smaller, bite-sized portions to use as an appetizer. Refrigerate leftovers.
