Chicken Florentine Pizza

1 | Rotisserie chicken, from the deli, shredded |

1 Tbsp. | Garlic oil |
1 tsp. | Dried Italian seasoning |
1 | Prebaked pizza crust, 16 oz. |
1 cup | Ricotta cheese |
1/2 cup | Mozzarella cheese, shredded |
1, 10 oz. package | Package frozen spinach, thawed and squeezed dry |
2 Tbsp. | Sun-dried tomatoes, marinated in olive oil; drained |
1/4 cup | Parmesan cheese, grated |
Directions
Preheat oven to 425° Fahrenheit. Pull 1 lb. of the rotisserie chicken into 1 inch pieces.
Heat garlic oil in large skillet to medium. Add chicken and cook 10 minutes or until done (internal temp 170°F). Stir in seasoning and remove from heat.
Combine ricotta and mozzarella; spread on prebaked pizza crust. Spread spinach over cheese mixture; add chicken and tomatoes. Sprinkle with Parmesan cheese.
Bake pizza 10 to 15 minutes or until crust is golden brown and cheese is melted.
Serving Suggestion: Cut into 8 portions for 4 servings or cut in smaller, bite-sized portions to use as an appetizer. Refrigerate leftovers.
