Chicken Curry Empanadas

Curry inspired empanadas are just what your kitchen has been missing.


2 cups

Rotisserie chicken, from the deli, chopped

1 cup

Frozen green peas, thawed

1 cup

Mild Indian yellow curry sauce

10 oz.

Prepared pizza dough, raw


  1. Mix together the chicken, peas and sauce together in a medium bowl.

  2. Preheat the oven to 425 degrees Fahrenheit.

  3. Lightly flour a worktable.

  4. Quarter the pizza dough.

  5. Roll out each piece of dough into a thin round circle. Portion the chicken mixture into half of each rolled piece of dough. Fold the unfilled dough over the filling and pinch to seal.

  6. Place on a baking sheet lined with parchment paper and bake for 20 minutes.
