Chicken Cobb Bowl
Turn your favorite salad into a bowl with some ancient grains, rotisserie chicken from the deli, and your favorite toppings.
Ingredients

2 cups | Rotisserie chicken, from the deli, chopped |

8.5 oz | Ancient grains, microwavable |
1/2 cup | Cherry tomatoes, quartered |
2 cups | Arugula |
1 | Avocado |
4 | Hard boiled eggs, peeled and quartered |
1/2 cup | Blue cheese crumbles |
1/2 cup | Red wine vinaigrette |
Directions
Heat the grains and chicken together in the microwave for 2 minutes, stirring ½ way through. Portion this mixture into the bottom of 4 bowls.
Top the grain/chicken mixture with the tomatoes, arugula, avocado, eggs and blue cheese into each bowl.
Portion out the vinaigrette using a spoon pouring equal amounts into each bowl. Serve while grains are still warm.
