Boursin Chicken Bites
Rotisserie chicken, from the deli
Mini fillo shells
Boursin cheese, garlic and fine herb flavor
Large shallot (minced or substitute red onion)
Minced flat parsley
Salt and freshly ground black pepper to taste
Grated gruyere cheese (or substitute white cheddar)
Preheat oven to 375° Fahrenheit.
Remove rotisserie chicken from bone and shred or chop into about 1 ½ to 2 cups. You can use your choice of white or dark meat. Place in a bowl and mix with Boursin cheese, shallot and parsley. Season with salt and pepper.
Place fillo shells on a baking sheet and fill with chicken mixture (approximately 1 tsp. full). Top with a healthy pile of gruyere (about 1 tsp.).
Bake until hot and bubbly, about 10 to 15 minutes.
