BBQ Chicken Sizzling Spuds
Boneless wings, from the deli, Original or BBQ
Large russet potatoes
Whipped chive cream cheese
Cheddar or pepper jack shredded cheese
Chopped green onions
Scrub potatoes and poke holes in them with a fork.
To save time cook potatoes (in batches of 4) in a microwave for 15 minutes.
After 15 minutes, remove potatoes from microwave and rub with olive oil, then place in oven for 10-15 minutes or until skin is crispy and potatoes are fully cooked inside.
Split open potatoes and cut off corner of one side on each potato.
Push two potatoes together (on cut sides) so they look like one large spud.
Fluff potatoes with a fork and add whipped cream cheese to each potato and mix in and let melt like butter. Next add chicken, cheese, and BBQ sauce to each potato.
Put each spud in the microwave for 45-90 seconds or until cheese is melted
Top with green onions and salt and pepper.
